China is now the greatest meat producer and consumer by total volume in the world today. Within a single generation, meat has shifted from an occasional treat to an everyday staple, marking a significant nutritional shift tied to rising incomes. Yet animal agriculture accounts for the largest share of food-production emissions and so rising meat consumption complicates climate action. Will China’s meat consumption keep rising?  

Dr. Tracey Fallon from the School of International Studies joins Mary and Derek in the lab to discuss Tracey’s publication “Meating Global China at Home” published in the Routledge Handbook of Global China. Listen as we discuss some of the issues and cultural currents around meat consumption and its reduction in China today.
